Homemade Breakfast Bars

I’m always looking for ways to make more food/snacks at home and buy less food that may contain preservatives. So, when I saw Nigella making breakfast bars on The Food Network a few weeks ago, I knew I had to make some of my own.

I had the day off work yesterday, so I made my way to the shop down the road to pick up a few things for a recipe that I’ve fallen in love with. I make one tray of these things and I get 14-16 bars (amount depends on how thinly you cut them).

The total amount of time to prepare them takes about 5 minutes! It’s great. It’s such a convenient snack. I cut them up after they have cooled and freeze the majority of them individually. When I want to take a snack on the go I just grab one from the freezer. It’s perfect and so easy!

Here’s the recipe I’ve been using (pictured above) but you could mix in whatever nut/fruit you like (or there’s also Nigella’s recipe here).

Easy Breakfast Bars

2.5 cups of rolled oats
1 cup shredded coconut
1 cup dried cranberries
3/4 cup peanuts (unsalted)
1/2 cup pumpkin seeds
1/2 sesame seeds
3/4 chocolate chips
1 can condensed milk (300ml or so)
(Next time I’m going to use almonds and leave the peanuts out!)

Directions: Preheat oven to 250°F. Mix it all together! Then place in a rectangular non-stick pan or use parchment paper, like I do. I press the mixture down with a spoon to make it flat and even across the pan. Let it bake for 60 minutes. It should be browning around the edges when finished. Let sit for 30 minutes and then cut into the portion sizes you prefer.
